Napoleon Bonaparte’s favorite meal before a battle, Chicken Marengo was said to be the creation of his personal chef when the army had moved too fast for their supply wagons. Told to improvise, the chef foraged among the local farms and created a stew of chicken, peppers, onions, truffles, and a wine sauce, served over a butters baguette, topped with a fried egg, and garnished with a scampi. Each layer presents a different combination of flavors and textures to make a meal fit for an emperor. Instructor: Michael McComas
