Many of the foods we consume today, especially tomatoes, potatoes, and refined sugar, were unknown prior to the European colonization of North America. The Scandinavian diet was influenced by both the short growing season of the far north and by the abundant seagoing trade. Archaeological evidence and contemporary accounts of Viking diet were used to develop the cookbook An Early Meal. We will make a dinner from these recipes consisting of a roast with sauerkraut, peas in a bag, and a mead and berry reduction sauce. Instructor: Michael McComas
