Cachupa or corn stew is a staple dish in the Cape Verde islands, with a different style of the stew made on each island. Often, a family would make it on Sunday and have it for breakfast the rest of the week. We will make “rico” (with meat) and “pobre” (vegetarian) versions, with Xerem, a cornmeal and pork side dish.
