Set in the fertile Caspian basin at the crossroads of Persia and the levant, Azerbaijani food has its own unique character, combining the rice dishes and spices of the East, Mediterranean flavors, and luscious use of fruits and nuts that makes their cuisine unique. In this class, we will look at some of the dishes one would expect in a holiday or wedding meal: dovga soup, a creamy starter for the meal; Shah Plov, the “king pilaf”, chicken and saffron rice in a bread shell; lamb kebab with a tangy pomegranate molasses sauce for dipping; and cardamom-walnut cookies.
